Another one of my healthy favorites, since you asked ;)...
2 cups cooked brown rice (cooled)
3Tbsp EVOO
12 oz. cooked shrimp (or chicken)
1 cup frozen peas
2 beaten eggs
3 Tbps low sodium soy sauce
pepper to taste
pepper to taste
Heat EVOO in fry pan and then add eggs. When eggs are ALMOST cooked through, add remaining ingredients and stirfry until everything is mixed well and cooked through. (Obviously, you can spice this up with whatever other veggies you like as well).
